The best way to store green onions is in a glass jar or vase with a wide base and opening. Cover the roots with an inch of water and store them near a light source (near a window) so they have access to direct sunlight. Also, make sure to change the water daily.

They will stay fresh this way until you’re ready to use them and in addition they will grow!

When you use a green onion, cut about 2-3 inches up from the bottom (use the image below as a guide, all the white part is what I left at the bottom) and place it back in the glass jar or vase. It will re-grow and you shouldn’t have to shop for green onions very often.

The dark green part of the onions in the image below is about 3 days of growth.

You can also plant green onions in a planter outside. Dig a small whole big enough for the root of your onion and leave the head poking out of the soil.
