MOM’S FAMOUS CHILI

My mom has been making this chili recipe since we were kids and it has always been a family favourite, especially on nights when we want to cozy up inside.

It is so easy and delicious, and freezes really well. We always pair it with her delicious nachos recipe which you can access here.

serves 4-6

INGREDIENTS

1 lb. extra lean ground beef
(swap for Yves veggie ground beef for vegetarian version)
(swap for ground turkey if you want to be more health conscious)

2 tbsp vegetable oil

1 large onion, chopped

2 garlic cloves, minced

1/2 red, orange, yellow and green peppers chopped

1 (341ml/12oz.) can corn niblets

1 (796ml/28oz.) can plum tomatoes

1 (156ml/5.5 fl oz.) can tomato paste

1 (284ml/10 fl. oz) can beef broth

2 tbsp chili powder

1 tsp dried oregano

1 tsp cumin

1 tbsp hot pepper flakes (or to taste)

2 (14oz./398ml) cans dark red kidney beans (chili style)

DIRECTIONS

Fry ground beef (or veggie ground beef). Pour off the fat. Add onions and salt and cook until onions are brown.

In a large pot add all other ingredients and mix together.

Then add in ground beef (or veggie ground beef) when cooked.

Simmer for 1 hour.

Freeze any left overs (left overs are better than freshly cooked).

Again, I highly recommend serving it with my mom’s crispy oven roasted nachos with fresh tomato and hot pepper salsa.
