AVOCADO TOAST

INGREDIENTS

GUACAMOLE

1 avocado, smashed

juice of 1 lime or 1/2 lemon

Himalayan pink salt

freshly ground pepper

small handful fresh cilantro

OPTIONAL INGREDIENTS

1 tsp freshly minced garlic

1 dash tobasco

slice of tomato per slice

2 slices of bread, toasted or 2 slices of artisan bread

DIRECTIONS

Toast your bread, if you’re using artisan bread you may want to skip this step as it’s good either way.

Smash your avocado until it’s as smooth as possible (if you’re making enough you could mix it in your vitamix for an extra smooth consistency). Add your lemon or lime juice, mix until well combined. Mix in cilantro, save a little to place on top if presentation matters to you.

Add freshly ground Himalayan pink salt and pepper, mix until well combined.

Place your toast on a plate and add a large dollop of your avocado mixture, rather than smoothing it down spread it out by creating a bit of a well in the middle. Place your tomato slice on top, I like mine off centre because it looks prettier. Than top with a sprinkle of fresh ground pepper and Himalayan pink salt. Garnish with remaining cilantro.
