EGG SCRAMBLE WITH SPICY BLISTERED TOMATOES, fresh thyme AND SPINACH

This is a little update to my original scrambled egg recipe with one simple change, the addition of fresh thyme and removal of green onions.

INGREDIENTS

2-3 eggs

1 tsp butter

1 handful spinach

1 handful cherry tomatoes, halved

1 tsp fresh thyme leaves

2 sprigs fresh thyme

1 sprinkle red chili flakes

freshly ground salt and pepper to taste

In a pot or pan, melt butter on medium heat then crack the eggs and whisk them together with half the thyme leaves in the pot on medium heat. I like to mix them using a spatula because I can really scrape the eggs off the bottom of the pan easily. Keep stirring the eggs and every 30 seconds remove them from the heat and keep stirring. Once fluffy and fully solidified set aside in a serving bowl.

In small sized pan sauté the tomatoes. Once they start to soften add in the spinach and allow to cook until spinach is wilted and tomatoes are blistered.

Add the tomato mixture on top of the eggs, season with salt, pepper and red chili flakes. Top with remaining sprigs of thyme and serve.
