HOME-MADE WOOD FIRED OVEN STYLE PIZZA

Wood-fired oven style pizza is one of my favourite treats. It’s one of the few things that can lure me out of my home and away from my healthy diet.

When my parents built their lake home they debating putting in a pizza oven but decided to buy the Breville Smart Oven Pizzaiolo. We’ve been so excited to try it and this whole ‘self isolation’ thing provided the perfect opportunity.

My parents had pre-bought the dough and pizza sauce we used from Lina’s Italian Specialty Market in Calgary, which was fantastic.

However, due to this I can’t give you the recipe we used for the dough or sauce but in the meantime I can point you in the direction of some promising recipes.

I’ll share the tips and tricks below on how to prep your ingredients and cook using the Breville Smart Oven Pizzaiolo and which recipes we used and loved

TIPS + TRICKS

PRE-MAKE YOUR DOUGH AND PIZZA SAUCE OR BUY IT IN ADVANCE

Pizza dough and sauce can be frozen, so make it in advance and thaw it out the day before you want to make your pizza. This will save you time on the day of cooking your pizza.

PREP YOUR TOPPINGS

Have all of your ingredients prepped and ready to go in advance.

When you’re getting prepped to cook the pizza, it’s way easier if all the toppings are prepped in advance, so all you need to worry about it shaping the dough.

We pre-grated all of our cheeses, and measured out all ingredients and placed them in bowls. We set them side aside until we were ready to use them.

The first pizza we made had too much dough and barely fit in the oven, so we halved the dough recipe and made 2 thinner, smaller pizza’s which fit better into the oven, cooked better and tasted better.

up the cook time

We cooked our pizza’s on the ‘wood-fired’ setting and it recommended a 3 minute cook time. We upped this from 3 - 4 minutes through trial and error and 4 minutes was perfect.

BRUSH THE CRUST WITH OLIVE OIL

Lightly brush the crust with olive oil before cooking. This will help crisp and brown the crust.

We pulled up this video on how to prep your dough/crust and how to use the oven. It was so helpful and made a huge difference in the result of the pizza. Even If you don’t have the oven this would be a great watch on how to handle your dough.

USE CORNMEAL

Dust your pizza peel and under your pizza dough with cornmeal. This makes it easier to scoop up your dough and it makes it easier to take it out of the oven.

PLACE YOUR SHAPED DOUGH ON THE PIZZA PEEL

Place your dough on your pizza peel and then add toppings before putting into the oven. We just found this easier. If you’re a master and can scoop it up, go for it but this just was a bit easier for us rookies.

PLACE YOUR OVEN ON A HEAT-SAFE SURFACE

My parents have light counter tops and the oven heats up to 750ºF so we placed our Breville Smart Oven Pizzaiolo on a large wood cutting board to protect the countertops from the heat.
