WHOLE WHEAT BREAD

I used to make bread with my grandad when I was a little kid. The smell of freshly baked bread still reminds me of him to this day. When my parents moved into their new lake home, my brother and I pitched in and bought them a bread maker as a house warming gift.

Over these last few months we have baked two loafs of bread a week and nothing compares to the taste of bread fresh out of the bread maker. Here is the whole wheat recipe we have been making and this is the bread machine we’ve been using: the Breville custom loaf bread maker.

makes 1 2.5 lbs loaf:

INGREDIENTS

1 3/4 cups + 1 tbsp, water, 80ºF (27ºC)

2 1/2 tbsp, unsalted butter 1/2” pieces at room temperature

2 1/2 tsp, salt

1/4 cup, brown sugar

5 cups, whole wheat flour

1 1/2 tbsp, vital wheat gluten (optional)*

1/4 cup, milk powder

3 tsp, yeast: Active Dry*

makes 1 2.0 lbs loaf:

INGREDIENTS

1 1/2 cups, water, 80ºF (27ºC)

2 tbsp, unsalted butter 1/2” pieces at room temperature

2 tsp, salt

3 tbsp, brown sugar

4 cups, whole wheat flour

1 1/4 tbsp, vital wheat gluten (optional)*

3 tbsp, milk powder

2 1/2 tsp, yeast: Active Dry*

makes 1 1.5 lbs loaf:

INGREDIENTS

1 cup + 2 tbsp, water, 80ºF (27ºC)

1 1/2 tbsp, unsalted butter 1/2” pieces at room temperature

1 1/2 tsp, salt

2 1/4 tbsp, brown sugar

3 cups, whole wheat flour

1 tbsp, vital wheat gluten (optional)*

2 1/4 tbsp, milk powder

1 3/43 tsp, yeast: Active Dry*

makes 1 1.0 lbs loaf:

INGREDIENTS

3/4 cups + 1 tbsp, water, 80ºF (27ºC)

1 tbsp, unsalted butter 1/2” pieces at room temperature

1 tsp, salt

1 1/2 tbsp, brown sugar

2 cups, whole wheat flour

3/4 tbsp, vital wheat gluten (optional)*

1 1/2 tbsp, milk powder

1 1/4tsp, yeast: Active Dry*

DIRECTIONS

To make the bread use the Breville custom loaf bread maker.

Paddle: Collapsible

Crust Colour Options: Light, Medium, Dark

Delay Start: Yes

DIRECTIONS

Ensure the collapsible paddle is securely attached and in the upright position before adding ingredients to the bread pan in the order listed. Secure the bread pan inside the baking chamber. Select the WHOLE WHEAT setting, desired crust colour and loaf size. Press START | PAUSE button. When the cycle is complete, use oven mitts to remove the bread from the bread machine and transfer to a wire rack to cool. Bread will slice best when allowed to cool.
