1/4 cup avocado oil
4 tomatoes or 3 cups cherry tomatoes
4 large basil leaves, chopped in thin strips
1 tbsp minced garlic
1/2 cup fresh mozzarella or burratta cheese
1 french bread baguette
Heat avocado oil up in a large saucepan. Once it's hot add tomatoes, basil and garlic to it. Let the mixture simmer with the lid on for 10-20 minutes. Once the mixture is heated through and the juices have mixed transfer the mixture to an oven safe dish and broil the mixture for five minutes.
While the mixture is cooking in the oven, heat 1 tbsp of oil in a pan. Add slices of baguette bread to the pan to toast them. Remove the bread when it's cooked to your liking.
Either add the cheese of your choice to the tomato mixture or poor the tomato mixture over the cheese on a serving platter.
