TOMATO PESTO TOAST

I love this recipe. Especially when you have access to really fresh ingredients. It’s a great lunch recipe or a lighter dinner.

INGREDIENTS

TOMATO, PESTO TOAST

1 slice of bread, (we got our loaf from the Romania Bread Company in Steveston)

2 tomato slices (farmers market fresh preferred)

1 tbsp pesto (recipe will follow)

TOMATO, hummus, cucumber PESTO TOAST

1 slice of bread, (we got our loaf from the Romania Bread Company in Steveston)

2 tomato slices (farmers market fresh preferred)

1 tbsp pesto (recipe will follow)

1 mini cucumber (spiralled or sliced)

2 almonds smashed ( I used a mortar and pestle)

PESTO

1/4 cup basil (farmers market fresh preferred)

3 cups spinach

3 tbsp olive oil

1/4 cup feta cheese

1 handful of almonds

1 tbsp minced garlic

Vitamix blender

mortar and pestle

Spiralizer

DIRECTIONS

Place all Pesto ingredients in a your blender and pulse until you get your desired consistency. I used a spatula to push the ingredients down as i went and then moved everything to a mortar and pestle to really crush the pesto. The vitamix does a great job in the beginning but if you aren’t making huge quantities you may need to do this as well.

Slice up your bread into your desired thickness. I prefer thin, because well, it’s bread. These recipes really rely on the freshness of the ingredients. Our bread was from a fantastic baker in stevenson.

Slice your tomatoes really thin. Spiralize your cucumber.

For the hummus toast, first spread a layer of hummus on the bottom, top with a layer of pesto, tomatoes and the spiralled cucumbers, top with a few crushed up almonds.

For the tomato pesto toast, add a layer of pesto and top with tomatoes.
