ASIAN EDAMAME SALAD

 

INGREDIENTS

2 cups mixed greens

1/4 cup green cabbage, shredded

3 tbsp edamame beans

1/3 cup cucumbers, seeded

2 tbsp dried cranberries

 2 tbsp pumpkin seeds

3 tbsp red quinoa

3 tbsp asian salad dressing 

 

DIRECTIONS

The perfect salad to bring for lunch. You can pack the dressing in a separate container so that the lettuce doesn't wilt. This salad was inspired by my favourite salad from Be Fresh Market. It's the perfect salad for lunch. I Prep by cooking the quinoa ahead of time. I make enough for a few salads and just store the extra quinoa in the fridge. Place two cups of mixed greens in a  bowl. Slice the green cabbage into really fine pieces and add to the mixed greens. I purchased frozen edamame beans from the freezer aisle. I just had to add 3 tbsp of edamame beans to a bowl with some water and microwave them for about one and a half minutes. Once they're thawed out add them to the greens and cabbage. Mix in the sliced cucumber, dried cranberries, pumpkin seeds and quinoa. Wait to add the salad dressing until your ready to eat. I just used a store bought brand.
