APPLE AND PARMESAN SALAD WITH HONEY CITRUS DRESSING

Nick and I recently ate at Nightingale, a trendy spot located in downtown Vancouver and we had their incredible apple salad. I made it my mission to re-create it at home so we could enjoy it on a more regular basis. Here’s what we came up with:

Makes 1 servings

 

INGREDIENTS

1 granny smith apples

1/4 cup walnuts

1 celery stalk, sliced

1 tbsps shaved fresh parmesan cheese

DRESSING

2 tbsp oil (avocado, extra virgin olive oil)

2 tbsp honey

1/2 lemon, juiced

 

DIRECTIONS

Cube your apple and place in a medium sized bowl.

Slice the celery into medium sized, elongated pieces. I cut my celery stalk on an angle to achieve this and then cut each slice in half. Add the celery to the bowl along with the chopped apple.

Combine your dressing ingredients by adding them to your blender and mixing them together until well combined.

Once the mixture is blended, poor it on top of our salad and toss. Add in the walnuts and toss some more until all ingredients are well coated in the dressing.

Transfer the mixture to your salad dish. Use a vegetable peeler to shave some fresh parmesan on top of the salad and enjoy!
