SUGAR SNAP PEA SALAD

serves two

ingredients

3 cups spinach

1/2 cucumber, skinned and cubed

2 tomatoes, cubed

1 cup sugar snap peas, cut into thirds

1/2 cup pea shoots, quartered 

4 eggs, hard boiled

5 tbsp little creek okanagan original dressing

DIRECTIONS

Bring a pot of water to a boil. Puncture four eggs and add to the boiling water. Cook them for 12 minutes.

While the eggs are cooking add spinach to a medium-large salad bowl. Skin and cube 1/2 a cucumber and add to the bowl. Cube two tomatoes and add to the bowl. Cut 1 cup of sugar snap peas into thirds and add to the bowl. Add the dressing the the salad and toss. Top the salad with 1/2 cup of pea shoots cut into quarters. 

When the eggs are cooked, run them under cold water to cool them off. Peal the shells off and cut them in half. I like to dip my eggs in hot sauce diluted with lemon juice.
