makes 22 balls
INGREDIENTS
1 1/2 cups roasted unsalted almonds
400g medjool pitted dates
4 tbsp cocoa powder
2 1/2 tbsp coconut almond butter (or just plain almond butter)
2 tbsp coconut oil
1 cup coconut ribbons
DIRECTIONS
Put the roasted unsalted almonds in a food processor until they are ground down. Once they've been ground down, add the dates, cocoa powder, almond butter and coconut oil to the food processor. Run the food processor until the mixture is well combined.
Remove the mixture from the food processor and roll the mixture into small balls. Dunk the balls into the coconut ribbons and freeze for 2 hours. After two hours remove the balls from the freezer and move to the fridge.
