LEMON PARSLEY CHICKEN

Nick and I have been frequenting Body Energy Club these last few months and I noticed they had pre cooked chicken in their refrigerator that had a marinade on it and was cut into cubes. I wrote down the ingredients listed on the back so i could work out the recipe on my own and have some stocked up in my fridge at all times. That way I could add the chicken to salads or just have a piece as a snack if I got hungry. It turned out to be absolutely delicious and so easy to make.

INGREDIENTS

3 chicken breasts

1 cup fresh parsley, finely chopped

3 tbsp extra virgin olive oil

1 lemon, juiced

1 sprinkle salt

1 sprinkle pepper

1 tsp thyme

1 tsp rosemary

1 tbsp minced garlic

DIRECTIONS

Preheat the oven to 375*F.
Line a cookie sheet with parchment paper and place three chicken breasts on it, evenly spaced.
I use frozen chicken breast fillets from costco, so I cook them from frozen which takes a bit more time. You can also use thawed chicken, you just don’t need as much time to cook it. I cook three chicken breasts at a time. I placed three breasts on the parchment paper, evenly spaced and placed in the oven and cooked them for 55 minutes. If your chicken is thawed they should only need 25-35 minutes to cook. Make sure all the pink is cooked out of the chicken before eating it.

When there is only a few minutes left remaining for the chicken to cook, use a medium size mixing bowl and mix all remaining ingredients together. Once the chicken is done cut it into cubes and add it to the mixture. Allow it to sit for a few minutes before serving. You can add it to a salad or place it in the freezer to use at a later time.
